Punch-Down Fermenters type FPK and PK are fixed and variable capacity tank with automatic punch down devices.
Punch-down fermenters are equipped with a cap submerging system, which consists of a punch-down agitator, pneumatic cylinder and a control unit. Designed with a computer interface for programming and precise fermentation cycles. All fermenters are fitted with double cooling jackets for temperature control through a computer interface. Fermenters are equipped with software that tracks the entire fermentation process at all times. We offer open and closed punch-down fermenters and a special design: the punch-down fermenter with a seed removal system. An inclined bottom with a large rectangular door for easy discharge.
Type FPK tanks are variable capacity tanks. These tanks are equipped with a control panel and removable punch down device to automatically set the time and duration of each punch down. The dismantling lid can be lifted by means of special lid fittings and attached to the reinforced upper rim. One lid can be used for several tanks with same diameter and the reinforced upper rim. The dismantling lid is equipped with the cap submerging system (pneumatic cylinder, submerged agitator) and the system of pumping must over the cap (pumping pipe, rotating sprayer). Tanks can also be equipped with a pump over tube and mounted pump on the tank for automatic pump overs if desired.

Type PK Tanks are Fixed Capacity Tanks. These tanks are also equipped with a control panel and a punch down device to automatically set the time and duration of each punch down. These PK fermenters enable both maceration techniques: maceration with the cap submerging system and the system of pumping must over the cap if desired.
The control unit enables setting submerging cycles, switching on/off of the must pump, regulation of temperature, switching on/off of the scraper and pips discharge valve.
There are five preset programs available, which the user can adapt and change according to the development of maceration.
Inclined bottom and large rectangular manway (optional: sliding hatch) enable a fast and simple emptying of the fermenter.
The entire cap-submerging construction can be removed and the fixed capacity fermenter used as an ordinary tank for must fermentation or as a wine storage tank under atmospheric pressure.
